The aircon turns itself on whenever I turn the car on How do I turn it to a manual function ie turn it on when I want it on.

Hi,
If the fan is switched on when you switch the car off, your aircon will switch on by default next time.
If the fan and aircon are off, your aircon will default to off.

Bizarre logic decision....

Mine doesn't, even if it is switched off it comes on when I restart.

No,mine comes on all the time too,I asked dealer and they said that it,s normal?
